1 Medium/Large Egg
Handful fresh spinach
1/4 TEASPOON of kosher salt
1/4 TEASPOON of black pepper
1/4 TEASPOON of onion powder
1 slice swiss cheese
1 small corn tortilla
2 tablespoons water
Place 2 tablespoon water in medium
nonstick skillet. Throw in spinach and cook until completely wilted. Throw seasonings into spinach and toss it up. Remove spinach.
Break egg into pan and cook evenly on both sides. I like my yolk broken and cooked. Your egg style is optional.
Remove egg and place corn tortilla onto pan. Toast on both sides until you see it puff up some..
Remove tortilla. Place Egg on top followed by swiss and spinach,garnish with cilantro or some onions and peppers for a nice crunch… and Ta-da, a great light quick snack!!!…1 pan…about 10 mins or less…and tastes great! Enjoy!!!
1 can Cannelini Beans
1 can sweet corn
1 can Black Beans
1 can red kidney beans
2 quarts chicken broth
1 tablespoon kosher salt
2 teaspoons chili powder
2 tspn cumin
2 tspn garlic powder
2 tspn onion powder
1 tspn red chili flakes
1 tspn black pepper
2 tspn paprika
I can Roasted red peppers (sliced)
2lb boneless chicken thighs (breast can also be used)
Season chicken with dash of salt and pepper on both side.
Brown chicken on both sides on skillet using 1 tspn of olive oil.
Place browned chicken in crockpot and combine all other ingredients.
Place crockpot on high for 4-5 hours.
Serve hot in a bowl garnished with light sour cream and shredded pepper jack cheese.
